Fine cocoa beans
Criollo and Trinitario cocoa grown under the shade of ocá and erythrina, on the east-facing slope.

- Hand-picked in two passes per plot. Pods broken the same day. Six-day fermentation in cedar boxes with two turnings. Slow drying on raised beds for nine to twelve days, sheltered from afternoon rain. Beans hand-sorted before bagging.

Highland Arabica coffee
Old-stock Arabica inherited from the Monte Café estate plantings, kept under high canopy.
- Process
- Selective picking of ripe cherries, one by one. Same-day pulping. Wet fermentation of 18 to 24 hours depending on the morning temperature. Washed in a running tank and dried on raised beds. Hulled and size-graded only days before dispatch.

Artisanal palm kernel oil
Cold-pressed kernel oil for culinary and cosmetic use.
- Process
- Fallen bunches gathered, with no palm felled. Gentle cooking, kernels separated by hand, cracked with a pestle and cold-pressed in a screw press. Forty-eight-hour settling and cloth filtration. No refining or bleaching.

Sub-canopy pepper and spices
Black pepper, nutmeg and cinnamon harvested in the lower storey of the agroforest.
- Process
- Hand-picked in ripe clusters. Brief blanching to fix colour. Sun-dried on mats through the morning for five to seven days, gathered in before the afternoon damp. Packed whole; never ground in storage.

Preserves from the estate orchard
Breadfruit, mango and passion fruit preserves, made in small batches.
- Process
- Fruit picked ripe and processed the same day in the estate kitchen. Slow open-pan cooking with local brown sugar and lime juice. Hot-filled, with no added pectin or preservatives. Batches of fewer than sixty jars.
